You can opt staff out of specific email templates by customizing the Email Templates to Exclude field under the Email Settings section of their staff profile.
To make edits to your Email Settings, you'll need to click on your name on the upper right corner of the page and then select My Profile -
If you scroll down until you see the Email Settings section, you can turn off templates for this particular staff. For this example let's say this staff does not want to receive notifications when appointments get scheduled with them anymore. You'll need to check the box next to New Appointment in the Email Templates to Exclude check list that appears when you click on the blue Edit button and then this staff would not receive new appointment email templates anymore, but all of your other staff still would -
The Email Instructions and Additional Email Instructions fields can be filled with content that can be populated into emails using the %STAFF_INSTRUCTIONS% and %STAFF_INSTRUCTIONS2% email tags. And the value of the Email Signature field gets automatically added to the bottom of all emails that get sent about appointments that staff is involved with.
